K is for Kit Kats: Kit Kat Cookies (Jessica)
Happy Almost New Year!
It seems hard to believe that tomorrow is the last day of 2011 and the day after that, we have to start writing 2012. When I was a kid, all the adults always talked about how fast time was going and I never believed it. It seemed like it took forever to get older or to finish that particular year of middle school, or whatever it was. Now that I'm (maybe?) an adult, I can definitely relate to that "time-flying" perspective.
This fall, in particular, has gone amazingly fast. I took some time today to look through the recipes Jen and I have made each week just to verify that all of those weeks between September and December really happened. (They did!). Take a minute and look through our archives, we've got quite a collection of recipes by this point!
This week's recipe doesn't need much of an intro (hence me going on about the impending year switch...), just a quick way to make cookies a bit more interesting!

K is for Kielbasa and Eggplant (Jennifer)
This week's post is short and sweet; mostly because my arms are burning from a very exhausting, but well worth it, DIY home improvement project! Today, with A LOT of help from my sweet dad--thanks, Dad!, we tiled my kitchen's backsplash with a pretty mosaic tile pattern. After months of looking at layers of peeling yellow paint (complete with a crazy 70's wallpaper that was exposed in some places underneath the yellow paint), I have a beautiful, sandy-hued backsplash to admire. Very exciting.
This week's recipe was inspired by my family the last time they all visited for dinner. We were talking about the blog and I mentioned my next recipe was for "K." What followed was a brainstorming session involving my grandmother, grandfather, mom and dad. Everything from kiwi to kielbasa was mentioned, but kielbasa is what stuck with me for the week. My grandmother is the one who mentioned kielbasa and eggplant, and the result is a simple, rustic, enjoyable dinner for two.

K is for Kale Chips (Jessica)
Good evening!
I fight the battle with myself every week (well, every day, in fact) of whether to eat something healthy or screw healthy and eat whatever I'm craving. Yes, occasionally those are one and the same and when that happens, life is good (for example: BLUEBERRIES). But more often, it's a struggle to avoid stopping by the candy bowl at the office down the hall for the third time in one afternoon. I'm not one of those people who counts calories or looks at fat content. My philosophy is to try to make healthier choices, but always indulge in delicious desserts, at least a few bites of them. Life is not about depriving myself!
This week, health won the battle in choosing a recipe. I made Kale Chips. No messing around, Kale is a ridiculously healthy vegetable (see here). But don't worry, these chips are tasty too, whew!
