It seems hard to believe that tomorrow is the last day of 2011 and the day after that, we have to start writing 2012. When I was a kid, all the adults always talked about how fast time was going and I never believed it. It seemed like it took forever to get older or to finish that particular year of middle school, or whatever it was. Now that I'm (maybe?) an adult, I can definitely relate to that "time-flying" perspective.
This fall, in particular, has gone amazingly fast. I took some time today to look through the recipes Jen and I have made each week just to verify that all of those weeks between September and December really happened. (They did!). Take a minute and look through our archives, we've got quite a collection of recipes by this point!
This week's recipe doesn't need much of an intro (hence me going on about the impending year switch...), just a quick way to make cookies a bit more interesting!
Kit Kat Cookies
makes about 36 cookies (the original recipe was for 5 dozen cookies, this is half)

Ingredients:
3/4 stick butter, softened
3/8 cup granulated sugar
3/8 cup firmly packed dark brown sugar
1 large egg
3/4 teaspoon vanilla extract
1 1/8 cups plus 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped Kit Kat bars (feel free to use slightly more or slightly less), this was about 2 full sized bars
Directions:
1. Beat together the butter and the sugars until creamy. Add the egg, then the vanilla.
2. Combine the dry ingredients (flour, baking soda, and salt) in a small bowl,
then gradually add to the creamed butter mixture.
Finally, stir in the Kit Kat bars.
3. Chill the dough in the fridge for an hour, or until you're ready to bake.
4. Drop tablespoonfuls of dough onto a parchment paper covered cookie sheet.
5. Bake at 350 degrees for 10 to 12 minutes. Remove cookies from the oven and cool on cookie sheet for 10 minutes, then transfer to wire rack to cool completely.
Review:
I really liked the idea of chopped up Kit Kats in cookies....in theory. In the cookies, they were still good, but lost their crunch. I think they would be good in a kitchen-sink type of cookie, but didn't do too much for me as a stand-alone addition. Maybe if I'd followed the original recipe and added oreos and chocolate chips as well, I would have liked them better.
Aside from that, this basic dough recipe came out a little dense. I would suggest picking a chocolate chip cookie recipe you really like and just adding Kit Kats to that! Don't try this cookie dough recipe, it wasn't the best.
So, in conclusion, this was good inspiration for a cool idea, but would need to be adapted to work well!
