X is for Coca Cola: Coca Cola Cupcakes with Peanut Butter Frosting (Jennifer)

Hello dear readers!
















Growing up, all soft drinks were considered "Coke" in my eyes. Were you like that? Some friends called it "pop", others called it "soda", but to me, it was always "Coke." Now, that could have meant I wanted "root beer", so then of course, you'd have to ask, but usually, it meant "Coca Cola" that sweet, sugary stuff in the red can with the swirly white writing on the side. We didn't get to drink it very often, but when we did, boy, was it delightful! So, to have a chance to incorporate this classic drink into a cupcake....yes, please!

X is for Cilantro! Cilantro Lime Chickpea Salad (Jessica)

Hi there!

Remember last time around the alphabet when I made that xochitl soup? Gosh that was fun! This time though, there still aren't many ingredients that start with X; therefore, I made a recipe with cilantro! Jen and I came across this recipe one day during lunch and thought it sounded good, but decided it could use a little sprucing up. X is for (oh-my-goodness-this-is-a-hard-letter) Xtra Amazing, Xtra Delicious, Xtra (insert your own adjective here) Warm Berries and Dumplings (Jennifer)

Hi friends,

'Twas the night before leaving for a conference and all through the house, this creature was stirring, doing absolutely everything possible to avoid packing. : ) Did you like that version of the song? Haha, well, tonight, I finally got around to my "X" recipe (as part of my procrastination strategy and something to do besides packing). This week, I'm definitely conceding to Jessica. She is awesome and actually found a recipe that began with "X." I'm cheating and making up my own recipe because, really, who wants to find xanthum gum, AND incorporate it into a recipe? Not in the cards for me this week. Instead, I turned to a recipe that appealed to my current need for comfort foods. And what says comfort food like a lil' dumplin'?

X is for Xochitl Soup (Jessica)

Dear Readers,

We've reached a monumental week! I'm sure you've been wondering for some time now what the heck we were going to come up with for the letter X. Yeah, not a lot of things start with X. Before I post the recipe that made it, let me share with you some others that just didn't make the cut!

-Xavier Steak: This is not a recipe. It's steak with toppings.
-Anything with Xanthan Gum: A substitute for people with allergies. Not a recipe and not tasty.
-Xacuti Chicken: This was actually the top contender until I realized it involved spending a fortune on unusual spices that would sit in my cabinet for years.

SO....when Shannon (a co-worker and writer of this lovely food blog--which we've listed on the right-hand side of our page) suggested Xochitl Soup and sent me a link, I was hooked! Now, on to the recipe!
