Sorry for the delay in this post, there were so many other things going on, I hadn't gotten any time in my kitchen!
As you might remember from this post, I really like white chocolate (even though it's not real chocolate), so when I found this chocolate muffin with white chocolate drizzled on top, I decided to try it! I added white chocolate chips to the batter as well (instead of the dark chocolate the original recipe called for), mmmmhhhmmmm. Sometimes a person just craves chocolate, am I right?!
Chocolate Muffins with White Chocolate Chips
from the Joy the Baker cookbook
makes 12 muffins
Ingredients:
1/2 cup (1 stick) unsalted butter
5 oz semisweet chocolate, chopped (I used chocolate chips)
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon instant coffee powder
1/2 cup packed brown sugar
2 large eggs
2/3 cup buttermilk
1 cup and 1/2 cup white chocolate chips
Directions:
1. Preheat oven to 350 degrees and line a muffin tin with paper liners.
2. Combine butter and chocolate chips and melt in a double boiler or in the microwave (use 50% power when microwaving to ensure chocolate doesn't burn). Let cool slightly.
3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and coffee powder.
4. Whisk the brown sugar into the slightly cooled chocolate. Whisk the eggs and buttermilk in as well and stir until well combined.
5. Add the flour mixture all at once and fold with a spatula until no visible flour remains. Add in 1 cup of white chocolate chips.
6. Pour into pan and bake for 18-22 minutes, or until toothpick inserted into center comes out clean. Let cool in the pan for 5 minutes and remove to wire rack to cool completely.
7. While muffins are cooling, melt 1/2 cup chocolate chips in double boiler or microwave (the same way as the chocolate earlier). Drizzle melted chocolate liberally over muffins.
Review:
These chocolatey muffins are delicious! They're not REALLY a breakfast muffin, but if you like sweet things in the morning, maybe they could be! The only part of the recipe I had trouble with was melting the white chocolate for the drizzling part at the end. The consistency wasn't really melty enough for drizzling, but looking at the pictures, you wouldn't know! Perhaps I should have used something more like a melting chocolate, or added a bit of oil to the chocolate... next time! :)
