D is for Dijon Mustard: Fresh Herb Vinaigrette (Jennifer)

Hello readers!

Happy Sunday! Today is seriously one of the most pleasant days we've had all fall. There's nothing but sunshine and blue sky to be seen for miles around and I'm loving it. Something else I'm loving is the fresh salad recipe for this week's featured ingredient: Dijon mustard!

Who can forget those awesome commercials where the gentleman asks that famous question , "Pardon me, would you happen to have any Grey Poupon?" As a kid, I found those commercials to be hilarious (I'm not exactly sure why); so hilarious in fact that I would try to imitate the man myself, of course using my most gentleman-ly, debonair accent. Fresh Herb Vinaigrette
featured in Cuisine at Home magazine "Holiday Edition"

Ingredients
1/4 cup white wine vinegar
1 Tbsp. each, minced fresh parsley leaves and chives
1 Tbsp. honey
1 Tbsp. Dijon mustard
Kosher salt and black pepper to taste
2 Tbsp. vegetable oil
2 Tbsp. extra-virgin olive oil
Spinach, butter lettuce, or salad mix of your choosing
Handful of cherry tomatoes
1/2 cup crumbled chevre (goat cheese), crumbled

Directions
1. Whisk together vinegar, parsley, chives, honey, mustard, salt and pepper for the vinaigrette in a bowl. Drizzle in olive oil and vegetable oil, whisking constantly until vinaigrette is well-blended.
2. Toss lettuce leaves with some of the vinaigrette. Arrange lettuce on a plate and sprinkle with tomatoes and cheese. Serve and enjoy! 



Review:
Love this salad! It's crisp, fresh, tangy, sweet and delicious all wrapped up into one! The creaminess of the goat cheese complements the acidity of the white wine vinegar and the punch of the Dijon mustard. If you are looking for a fresh vinaigrette recipe, give this one a try!
