Happy May!
The past few days haven't felt particularly spring-like, what with the grey clouds and slight drizzle this week, but hopefully soon it will be warm and sunny again..like this afternoon :) Pretty soon, I'll be making more Spring-like recipes. In the meantime, this past weekend, I made Yellow Curry---a good cold night recipe.
Really, one of my coworkers made the suggestion for this and I had never tried a curry recipe before, so it seemed like a good opportunity! Combined with some brown basmati rice and naan (from the frozen section at Trader Joe's), it was ALMOST like we went out for Indian food. This recipe was pretty good, but beware: cayenne pepper is spicy! ;)

X is for Coca Cola: Coca Cola Cupcakes with Peanut Butter Frosting (Jennifer)
Hello dear readers!
Growing up, all soft drinks were considered "Coke" in my eyes. Were you like that? Some friends called it "pop", others called it "soda", but to me, it was always "Coke." Now, that could have meant I wanted "root beer", so then of course, you'd have to ask, but usually, it meant "Coca Cola" that sweet, sugary stuff in the red can with the swirly white writing on the side. We didn't get to drink it very often, but when we did, boy, was it delightful! So, to have a chance to incorporate this classic drink into a cupcake....yes, please!

X is for Cilantro! Cilantro Lime Chickpea Salad (Jessica)
Hi there!
Remember last time around the alphabet when I made that xochitl soup? Gosh that was fun! This time though, there still aren't many ingredients that start with X; therefore, I made a recipe with cilantro! Jen and I came across this recipe one day during lunch and thought it sounded good, but decided it could use a little sprucing up. If you want to see the original post, check out the Oh She Glows website (which you should anyway, 'cause it's great)! This version is my version. :)

W is for White Chocolate: Chocolate Muffins with White Chocolate Chips (Jessica)
Sorry for the delay in this post, there were so many other things going on, I hadn't gotten any time in my kitchen!
As you might remember from this post, I really like white chocolate (even though it's not real chocolate), so when I found this chocolate muffin with white chocolate drizzled on top, I decided to try it! I added white chocolate chips to the batter as well (instead of the dark chocolate the original recipe called for), mmmmhhhmmmm. Sometimes a person just craves chocolate, am I right?!
